Both the first and last hotels on this journey are reserved entirely for our group—a seven-room seaside inn on Noto Island and eight private hot spring villas in Fukui. Day 1

Your journey begins at Aman Tokyo—a calm sanctuary suspended high above one of the world's most electric cities, where soaring ceilings inspired by traditional paper lanterns and soft natural light make the chaos below feel very far away. This evening, meet your guides over welcome cocktails and get a first taste of what lies ahead.

Day 2

The first day in the saddle sets the tone perfectly: quiet backroads lined with cedar trees and rice fields lead across the Notojima Ohashi Bridge to Noto Island, arriving at Hitotsu Notojima—a stunning small inn where contemporary design meets panoramic views over Nanao Bay. The evening raises the bar immediately with an omakase welcome dinner of premium nigiri and seasonal Noto Peninsula sushi paired with local sake.

Day 3

A morning ride through rolling countryside and coastal roads—with dolphins occasionally spotted offshore—stops first at the Notojima Glass Art Museum before continuing to a family-run soba restaurant for handmade noodles at lunch. The afternoon quiets further with a private guided visit to Daikakuji Temple, its koi-filled ponds and serene gardens accompanied by the head monk himself.

Day 4

One of Japan's most iconic landscapes unfolds on today's ride—Toyama Bay shimmering on one side, the dramatic Tateyama Mountain Range rising on the other. A browse at Himi Harbour Market leads to lunch at Says Farm, a winery perched high above the bay where panoramic views meet gourmet cuisine and locally produced wine, before arriving in Kanazawa for an evening of lantern-lit streets and samurai-district wandering.

Day 5

The bikes rest today as Kanazawa, a castle town largely spared from WWII destruction, reveals its extraordinary depth on foot. Kenrokuen, considered one of Japan's three great gardens, anchors the morning alongside Kanazawa Castle and the D.T. Suzuki Zen Museum, with a matcha pause feeling entirely earned amid the Edo-period landscape.

Day 6

A transfer south into the Kaga mountains brings you to Yamanaka Onsen, a hot spring town known for its forested gorges, traditional lacquerware and deeply rooted onsen culture. Lunch at Auberge ‘eaufeu’—French-inspired cuisine prepared with mountain herbs, wild game and local seafood inside a restored elementary school—is one of the journey's most memorable meals. The evening is yours to explore the town on foot before slipping into yukata for kaiseki dinner at the ryokan.

Day 7

A gentle loop around a quiet reservoir opens into forested mountain roads surrounding Hakusan, one of Japan's most sacred peaks, before arriving at Natadera Temple—1,300 years of history set among dramatic rock formations and beautiful gardens worth lingering in. One final climb earns a handmade Italian lunch before the day ends at Kanshukuen, where private villa accommodation and a multi-course "Spring Terroir" dinner celebrating the flavours of sea, river and mountain await.

Day 8

Today's ride heads south through Fukui Prefecture to Echizen, a region celebrated for two distinct craft traditions: handmade washi paper produced here for more than 1,500 years, and the blade-making heritage that has made Echizen knives among Japan's most respected. The journey ends back at Kanshukuen for a final multi-course French fusion dinner built around Fukui's finest local seafood, wild game and diver-harvested delicacies.
