This is, after all, the place where the famous Dom Perignon, cellar-master at the Abbaye de Hautvillers, refined age-old traditions and created revolutionary techniques for producing Champagne. As for the biking, the empty roads stretch out like a ribbon through the rolling hills covered in cabbage, wheat and of course, vines.
